Foodie Friday – update

We have had a few Foodie Fridays now.  We had fruit crumble (recipe below) and cake decorated SPECTACULARLY with lots of fresh fruit.  The cake was from a cake mix so no recipe will be posted here, but there are lots of photos to look at and drool over :).

Pear and Plum Crumble

Ingredients:

  • 2lbs (900g) or so fresh or frozen fruit. We used apples, pears, blueberries and lots of others that I forget now.
  • 1/4 fine sugar
  • 1 cup all purpose flour
  • 1/2 cup whole-wheat flour
  • 1/2 tsp salt
  • 3/4 stick butter
  • 1/2 cup rolled oats
  • 1 tsp ground ginger
  • 1/2 cup white sugar

Method:

  1. Pre-heat oven to 400 degrees.
  2. Put the fruit in an oven-proof dish. Sprinkle the superfine sugar over top.
  3. Put the flour and salt in a bowl.
  4. Rub or cut in the butter.
  5. Stir in the oats, ginger and sugar.
  6. Sprinkle the topping on the fruit.
  7. Cook for 40 to 45 minutes.
  8. Serve hot, warm or cold.  Tastes great any way!

… and Ms. Montgomery’s personal favourite, tortilla chips, salsa and guacamole!

Guacamole

Ingredients:

  • 1 fresh tomato, chopped into small pieces
  • Juice from ½ lime
  • 3 ripe avocadoes
  • ¼ chopped jalapeno pepper
  • 1 clove garlic, pressed or chopped small
  • ¼ red onion, chopped small
  • Chopped fresh cilantro to taste
  • Pinch salt and pepper

Method:

  • Cut each avocado in half lengthways around the stone. Scoop the stone out of the middle with a spoon and scope the avocado flesh (green part) into a bowl.
  • Mash the avocado into a smooth paste with a fork.
  • Mix all the other ingredients into the mashed avocado and stir until smooth and creamy.
  • Serve chilled with tortilla chips and salsa.
  • *If you need to wait a while before serving, put an avocado stone back in the mixture. This will help to keep it from going brown.
  • **Adding seeds from the jalapeno pepper will make your guacamole spicier, so be careful!

Tomato Salsa

Ingredients:

  • 6 ripe tomatoes
  • ¼ small red onion
  • ½ bunch fresh cilantro, or to taste
  • ¼ chopped jalapeno pepper
  • 1 red pepper
  • 1 clove garlic
  • Salt and pepper to taste

Method:

  • Chop all ingredients and mix together in a bowl.
  • Chill in the refrigerator until ready to serve.
  • The more time the salsa has to “rest” before serving, the more flavourful it becomes.
  • Serve with tortilla chips and guacamole.
  • *See note above about seeds from the jalapeno pepper!
