{"id":1133,"date":"2016-04-23T01:08:42","date_gmt":"2016-04-23T01:08:42","guid":{"rendered":"http:\/\/sd41blogs.ca\/montgomeryc\/?p=1133"},"modified":"2016-04-23T01:08:42","modified_gmt":"2016-04-23T01:08:42","slug":"foodie-friday-update","status":"publish","type":"post","link":"https:\/\/sd41blogs.ca\/montgomeryc\/2016\/04\/23\/foodie-friday-update\/","title":{"rendered":"Foodie Friday &#8211; update"},"content":{"rendered":"<p>We have had a few Foodie Fridays now. \u00a0We had fruit crumble (recipe below) and cake decorated SPECTACULARLY with lots of fresh fruit. \u00a0The cake was from a cake mix so no recipe will be posted here, but there are lots of photos to look at and drool over :).<\/p>\n<p>Pear and Plum Crumble<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2lbs (900g) or so fresh or frozen fruit. We used apples, pears, blueberries and lots of others that I forget now.<\/li>\n<li>1\/4 fine sugar<\/li>\n<li>1 cup all purpose flour<\/li>\n<li>1\/2 cup whole-wheat flour<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>3\/4 stick butter<\/li>\n<li>1\/2 cup rolled oats<\/li>\n<li>1 tsp ground ginger<\/li>\n<li>1\/2 cup white sugar<\/li>\n<\/ul>\n<p>Method:<\/p>\n<ol>\n<li>Pre-heat oven to 400 degrees.<\/li>\n<li>Put the fruit in an oven-proof dish. Sprinkle the superfine sugar over top.<\/li>\n<li>Put the flour and salt in a bowl.<\/li>\n<li>Rub or cut in the butter.<\/li>\n<li>Stir in the oats, ginger and sugar.<\/li>\n<li>Sprinkle the topping on the fruit.<\/li>\n<li>Cook for 40 to 45 minutes.<\/li>\n<li>Serve hot, warm or cold. \u00a0Tastes great any way!<\/li>\n<\/ol>\n<p>[metaslider id=1192]<\/p>\n<p>\u2026 and Ms. Montgomery\u2019s personal favourite, tortilla chips, salsa and guacamole!<\/p>\n<p><u>Guacamole<\/u><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 fresh tomato, chopped into small pieces<\/li>\n<li>Juice from \u00bd lime<\/li>\n<li>3 ripe avocadoes<\/li>\n<li>\u00bc chopped jalapeno pepper<\/li>\n<li>1 clove garlic, pressed or chopped small<\/li>\n<li>\u00bc red onion, chopped small<\/li>\n<li>Chopped fresh cilantro to taste<\/li>\n<li>Pinch salt and pepper<\/li>\n<\/ul>\n<p>Method:<\/p>\n<ul>\n<li>Cut each avocado in half lengthways around the stone. Scoop the stone out of the middle with a spoon and scope the avocado flesh (green part) into a bowl.<\/li>\n<li>Mash the avocado into a smooth paste with a fork.<\/li>\n<li>Mix all the other ingredients into the mashed avocado and stir until smooth and creamy.<\/li>\n<li>Serve chilled with tortilla chips and salsa.<\/li>\n<li>*If you need to wait a while before serving, put an avocado stone back in the mixture.
